Dinner tonight: Sauteed veggie wraps with CSA produce!
We got our CSA box on Tuesday, and it was loaded with good stuff. We’ve been out for something pretty much every evening since then, so everything sat relaxing in our fridge.
Tonight, out came the cast-iron skillet. Into it went some of the excellent olive oil from Penn Mac, followed by chopped garlic scapes and green onions (CSA). While that was sauteing, potatoes (also CSA) were rough-chopped and put into the microwave for a quick head-start on cooking. Then I chopped a big bunch of chard (CSA). Into the pan (now on high heat) went the potatoes, followed by some seasoned salt, paprika, and cumin. While those finished cooking and browning a bit, I cut some corn off the cob (left-overs from this past weekend), and chopped a bunch of fresh parsley (CSA). Then into the pan went the chard and corn, followed by some black pepper. After everything had cooked-down, I tossed in some fresh thyme and oregano (CSA), and went for a taste. It needed a bit more salt (the potatoes really seemed to suck that up today) and maybe a bit more paprika, and it was good to go.
We ate this on tortillas with a little bit of shredded cheese, and they were completely awesome. Yay CSA!
